Budget-Friendly Potato Recipes for Delicious Meals
Poppy O’Toole, the author of the popular cookbook "£1 Meals", has shared some easy and budget-friendly potato recipes that are perfect for any meal. One such recipe is the Smashed Jacket Loaded with Three-Bean Chili.
To make this recipe, start by washing and drying four large potatoes. Prick them all over with a fork, then rub them with olive oil and salt. Bake the potatoes in the oven for around 50 minutes, or until they are cooked through and the skin is crispy.
While the potatoes are baking, you can prepare the three-bean chili. In a large pan, sauté some chopped onions and garlic in a little bit of oil until they are soft. Then, add a tin of chopped tomatoes, a tin of drained kidney beans, a tin of drained black beans, a tin of drained cannellini beans, and a tablespoon of chili powder. Stir everything together and let it simmer for around 20 minutes.
Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Then, cut them open and mash the insides with a fork. Spoon the three-bean chili over the top of the mashed potatoes, and add a dollop of sour cream and some chopped fresh herbs, if desired.
