Healthy and Delicious: Tamarind Chicken Lettuce Cups


Here's a recipe for Tamarind Chicken Lettuce Cups:

Ingredients:

- 1 pound chicken breast, diced


- 2 tablespoons vegetable oil


- 1 tablespoon garlic, minced


- 1 tablespoon ginger, grated


- 1 tablespoon tamarind paste


- 2 tablespoons soy sauce


- 1 tablespoon honey


- 1 teaspoon sesame oil


- 1 head iceberg lettuce, leaves separated


- 1/4 cup cilantro leaves, chopped


- 1/4 cup scallions, sliced


- 1 lime, cut into wedges

Instructions:

1. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, until browned and cooked through.

2. Add the garlic and ginger to the skillet and cook for 1-2 minutes, until fragrant.

3. In a small bowl, whisk together the tamarind paste, soy sauce, honey, and sesame oil. Pour the mixture over the chicken and stir to coat.

4. To assemble the lettuce cups, place a spoonful of the chicken mixture in the center of each lettuce leaf. Top with cilantro, scallions, and a squeeze of lime juice.

5. Serve immediately and enjoy!

Note: If you can't find tamarind paste, you can substitute with lime juice or vinegar mixed with brown sugar.
