Mediterranean Three Bean Salad Recipe
- Ingredients:
- - 1 can of chickpeas, drained and rinsed
- - 1 can of kidney beans, drained and rinsed
- - 1 can of black beans, drained and rinsed
- - 1 red onion, diced
- - 1 red bell pepper, diced
- - 1 yellow bell pepper, diced
- - 1/2 cup of chopped fresh parsley
- - 1/4 cup of chopped fresh mint
- - 1/3 cup of olive oil
- - 3 tablespoons of red wine vinegar
- - 1 tablespoon of Dijon mustard
- - Salt and pepper to taste
Instructions:
1. In a large mixing bowl, combine the chickpeas, kidney beans, and black beans.
2. Add the diced red onion, red and yellow bell peppers, chopped parsley, and chopped mint. Mix well.
3. In a small mixing bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
4. Pour the dressing over the bean mixture and toss until everything is well coated.
5. Chill the salad in the refrigerator for at least 30 minutes before serving.
6. Garnish with additional chopped parsley and mint if desired.
